Which wood species gray to a nice even silver, not blotchy?

I actually want the weathered silver gray look, not fighting to keep wood its original color. Which species gray out evenly instead of going blotchy and streaky black? I'd like something that'll still be solid years down the line, just gray. What's worked for you?
