So many wood siding profiles, does the choice actually matter?

Trying to get my head around all the wood siding profiles before I pick one, lap, shiplap, T&G, channel, board and batten, nickel gap, all of it. Is there a practical reason to choose one over another, or is it mostly about looks? What did you go with and would you do it again?
